The Parador de Sigüenza is located in the city of Sigüenza, declared a Historic-Artistic Site in 1965. It occupies the medieval castle, dating from the 12th century, installed in an Arab citadel and built over a Roman settlement. Its interiors are decorated with Castilian-style furniture, which is also shared by its cosy rooms, some of them with beds with canopies. Between the thick stone walls there is a cobbled courtyard, a stately dining room, halls perfect for meetings and celebrations and the 13th century Romanesque chapel. It has an elegant dining room where you can enjoy the best Castilian flavour and a menu of local dishes: fried free-range eggs, migas (fried breadcrumbs dish) and bacon, oven-roasted goat, cod, La Mancha cheese, and for dessert, the famous "borrachitos seguntinos".
